How to Clean and Care for Wood Cutting Boards

    As one of the essential kitchen accessories, cutting boards need daily cleaning and regular maintenance to keep them clean. Using a clean cutting board can help you avoid getting sick from dirty food. So how do you clean and maintain your wood cutting board?

1: Washing

    Start by gently scraping off any food stuck to the cutting board with a scraper or metal spatula. Then wash the cutting board, including the bottom and edges, with water or soap. If there are stubborn stains, you can mix baking soda and water to make a slurry, then gently rub the mixture onto the board with a sponge. Most people only clean the top, which can actually end up hurting the cutting board. When the drying is uneven, it deforms the wood.

    Dry thoroughly with a clean dish towel or paper towel, place it upright on a counter to prevent any residual water from pooling, and allow it to air dry completely before storing.

2: Oiling

    The next day coat the cutting board with mineral oil or edible beeswax and leave it upright to dry as before.

    Wood dries out after frequent cleaning, so you'll need to oil and wax it to prevent it from becoming brittle and cracking, and also to prevent moisture. Oiling helps keep the cutting board clean, making it less likely to deform or crack, preventing it from staining or absorbing strong odors.
    There is no set time for oiling your cutting board, depending on the environment in which you store it, the type of wood, and how often you use it. Once a month is recommended. It doesn't hurt to oil your cutting board when it looks dry. If you sprinkle a few drops of water on a cutting board, it will bead when there is enough oil on it. Your cutting board will need more oil if water disperses or seeps into the board.

3: Polished

    When your cutting board has been used for many years and has developed deep scratches, it is necessary to wipe down and sand the board with a fiber cloth to reduce scratches.


4.Remove odors

    If your board smells strong foods like garlic and Onions, use a mixture of lemon juice and kosher salt to get rid of the board odor. Sprinkle the cutting board generously with kosher salt. Squeeze the lemon juice over the salt and rub the mixture with the cut side of the lemon on a cutting board to allow the paste to dry completely on the board, then gently scrape it off with a scraper or metal spatula and wash and dry the board.

Alternatively, you can spray the surface of the board with a solution of 25% white vinegar and 75% water. After spraying, stand the board upright and allow it to air dry completely before storing. Be aware that this may temporarily leave a vinegar smell on your cutting board.

5.Know when to discard your cutting board

    In theory, with proper care, a cutting board can last a lifetime. With a cleaning process like this, the cutting board should look good for decades.

When your cutting board deforms and cracks badly, buy a new one. Because food and bad bacteria can build up in the cracks, food treated with this chopping board could make you sick.
